We’re exactly 21 days away from the publication of Fundamentals of Flavor. How do I feel? I’m excited, but honestly, I’m also terrified.
You would think that by a fourth book I’d be better prepared for this part. I’m not. There is something unnerving about spending years thinking, testing, writing, questioning, and then finally having to let the work go. Soon this book won’t belong only to me. You’ll cook from it, form your own opinions about it, hopefully love parts of it, and maybe disagree with others.
And strangely, I’m glad I still feel this way. The rush of joy and fear tells me how much I care about this book and about what I’m sharing with you.
At its heart, Fundamentals of Flavor is about something I find endlessly fascinating: every time we cook, we manipulate the elements of nature.
Part of what makes releasing this book so nerve-racking is that the idea behind it has lived in my head for such a long time. I kept coming back to a question that sounds incredibly simple: What are we actually doing when we cook?
We talk about techniques all the time. Roast this. Ferment that. Boil, fry, steam, grill. But underneath all those instructions, something more fundamental is happening. We are using heat, water, microbes, and air to change food. Once I started thinking about cooking this way, I began seeing these forces everywhere.
That became the idea I wanted to explore in Fundamentals of Flavor.
It doesn’t matter whether you’re a chef intricately layering herbs with a pair of tweezers and adding dots of sauce to a plate or simply trying to get dinner on the table. Knowingly or unknowingly, we transform ingredients into something edible, nutritious, and hopefully, delicious.
The four elements of nature, Fire, Earth, Air, and Water, help us make those transformations.
Think about a pot of soup sitting on the stove. Fire provides energy as heat to soften tough foods. The vinegar added to the soup came from microbes that fermented sugar, the work of Earth. Water extracts and carries flavors and nutrients throughout the pot. And Air carries the volatile molecules released from the soup to our noses, allowing us to experience its aroma before we even take the first spoonful.
What amazes me is how old this knowledge is. Long before we could measure temperature precisely, identify an aromatic molecule, or understand the chemistry of fermentation, our ancestors figured out how to use these elements to make food taste better. They learned through observation, repetition, and experience.
A decade from now, or a hundred years from now, we may have entirely new ways to cook. But we will still be manipulating these same four elements. The technology may change. The fundamental forces that build flavor won’t.
Let’s start with Fire.
Fire gave us heat, and over time we learned how to control and measure it through temperature. We learned that heat could soften food and create entirely new flavors through chemical reactions like caramelization and the Maillard reaction. We also learned that warmth helps aromatic molecules escape from food more readily, changing what we smell and, in turn, how we perceive taste.
And you don’t need a laboratory to see any of this happen. You can watch it happen to a nectarine on a grill.
That’s why I picked grilled nectarines with bulgur salad and hazelnut aillade to share with you from Fundamentals of Flavor.
A nectarine eaten raw is juicy, floral, sweet, and tart. Put that same nectarine over a hot grill, and it becomes something else. The fruit softens. Some of its water evaporates. Its sugars concentrate. The surface browns and develops deeper, more complex flavors.
It is still a nectarine, but Fire changes how we experience it.
That transformation is what Fundamentals of Flavor is all about: understanding what happens when we cook, why it happens, and how knowing a little more about it can give us more freedom in the kitchen.
Curiosity is where this book begins.
