For the longest time, I assumed the secret to chilled tomato soup was finding the best tomatoes.
I was lucky enough to have plenty to test that theory this summer. After months of watering, protecting, and occasionally worrying over my tomato plants, they rewarded me with more Sungolds than I knew what to do with. Some went into salads and into a version of sun-dried tomatoes. Some disappeared straight off the vine. And many ended up in this soup.

Somewhere along the way, though, I realized I'd been obsessing over the wrong ingredient.
This recipe has quickly become one of my favorite summer lunches. It's refreshing, surprisingly filling, and comes together in minutes. But the ingredient that transforms it from blended tomatoes into a silky, satisfying meal isn't the tomato.
It's stale bread.
It sounds backwards. Until you understand what's happening.

Why Stale Bread Makes this soup Silky
Like traditional salmorejo and many classic gazpachos, this soup gets its silky body from stale bread. As bread stales, it loses moisture and its starches reorganize, allowing the crumb to readily reabsorb liquid when blended with the tomatoes and water. The hydrated starch and finely dispersed bread particles increase the soup's viscosity, transforming what would otherwise be thin tomato water into a smooth, velvety purée. Fresh bread doesn't work as well because its higher moisture content produces a pastier texture rather than the lighter silkiness of stale bread. The bread also helps stabilize the emulsion by increasing viscosity, much like the role of an egg yolk in mayonnaise or beurre blanc, even though it isn't acting as a true emulsifier itself.
